World-class accommodation and dining

Partnering with The Bentley Group, the hotel restaurant will offer in-house guests and Sydneysiders a menu of modern brasserie fare. Produce will be sourced from small, independent farmers and growers to celebrate the best of Australian produce. Cooking methods will draw upon age-old techniques such as curing, smoking, fermenting, preserving and pickling with a charcoal grill becoming the theatrical centrepiece of the open kitchen.

The sophisticated ground-floor restaurant will be further elevated with Hildebrandt’s wine program. Showcasing new and interesting producers along with iconic Australian and European labels, the wine list will also tap into The Bentley Group’s aged cellar, offering rare and aged wines to be savoured in the luxurious surrounds.

McRae Bar is a modern rendition of a Victorian-era drinking den, named after the building’s original architect George Rae. Open as public hospitality spaces, the restaurants are filled with commissioned and collected artworks.

The ground floor has six meeting and event spaces, catering for 10 to 80 guests. Each space has high ceilings, an abundance of natural light and is fitted with the latest high-tech conferencing equipment.
