This simple hot & sweet Vietnamese minced pork dish is a lovely little street food-style dish that is packed full of flavour. You could serve it with rice or noodles, and it is perfect to batch cook and reheat as you need it.

Hot & Sweet Vietnamese Pork: Ingredients
- Minced pork
- Brown sugar
- Fish sauce
- Red chillies
- Ginger
- Garlic
- Onions
Peel the garlic, onions and ginger and chop them up as fine as you possibly can. Chop the chillies, leaving the seeds in for an extra kick if you love a bit of heat.
Heat a large frying pan or wok and add some sunflower oil. Cook the garlic, chillies and ginger over a medium to high heat. Keep them moving using a spatula or by tossing the pan for about 1-2 minutes. It is really important you don’t burn the ingredients at this stage, as it would taint the whole dish.
Add in the minced pork. You will need to prod it with the spatula so that it breaks down into small pieces and there are no lumps.
When the meat has browned off, add in the fish sauce. A generous sprinkle! Season with salt and pepper.
Add in a dash of brown sugar. You will need to keep the pork moving on an ongoing basis so that it browns up evenly.
You want the pork to be slightly juicy, but at the same time to have a nice golden brown crispiness to it.
Serve up immediately with either rice or noodles.
